Dehydrated citrus for cocktail garnishes:

This is a great way to use older citrus or citrus where you only used the peel for garnish. Use for cocktail garnishes, baked good toppings, garland, etc.

Here’s how to dehydrate in the oven:

1. Preheat oven to 170˚F

2. Slice citrus with a sharp knife—the thinner the cut the better.

3. Using a cooling rack on top of a baking sheet, arrange the citrus slices in a single layer, working in multiple batches if need be.

4. Lemons and limes, 4 to 5 hours

5. Oranges and grapefruits, 7-9 hours

6. Rotate baking sheet every 2 hours

7. Slices should be completely dry and slightly brittle, remove from the oven and allow to cool completely.

8. Store in an airtight container. Slices can last years if you make sure no moisture is left.
